Thai-Inspired Soup
The formula
Ground beef + peanut butter + peas + warm spices
What you’ll need
- Ground beef
- Onion, diced
- Garlic, minced
- Peanut butter (read the label; use organic if possible)
- Fish sauce (optional)
- Apple cider vinegar
- Frozen peas
- Optional toppings: lime juice, fresh cilantro
- Spices & seasonings: fresh or ground ginger, cumin, salt, and pepper
How to make it
- Sauté the onion and garlic in a large pot. Cook until softened.
- Add the ground beef, ginger, cumin, red pepper flakes (optional), salt, and pepper. Cook until beef is browned.
- In a small bowl, combine the peanut butter (~1/3 cup), apple cider vinegar (~2 tbsp), and fish sauce (~2 tbsp; optional).
- Stir the peanut butter mixture into the pot with enough water to reach the consistency you want.
- Add the frozen peas and simmer until heated through.
- Finish with lime juice and/or fresh cilantro if using, then taste and adjust the seasonings.

- Add bell peppers, mushrooms, or other vegetables you have on hand.
