Cottage Pie Casserole

The formula

Ground beef + mixed vegetables + a mashed vegetable topping

What you’ll need

  • Cauliflower, potato, sweet potato, or butternut squash (fresh or frozen)
  • Heavy cream and/or butter (optional, for the mashed vegetables)
  • Ground beef
  • Onion, diced
  • Garlic, minced
  • Mixed frozen vegetables (I use a carrot, corn, green bean, and peas blend)
  • Coconut aminos (optional)
  • Mozzarella cheese, shredded (optional)
  • Spices & seasonings: Italian seasonings, paprika (optional), salt, and pepper

How to make it

  1. Cook your choice of cauliflower, potato, sweet potato, or butternut squash until very tender.
  2. Mash the cooked vegetables with salt and pepper. Add cream and/or butter if you like, then set aside.
  3. Sauté the onion, garlic, and mixed frozen vegetables in a large skillet until softened and heated through.
  4. Add the ground beef, Italian seasonings, paprika (if using), salt, and pepper. Cook until the beef is browned, then stir in coconut aminos if using.
  5. Transfer the beef mixture to a baking dish, spread the mashed vegetables over the top, and sprinkle with mozzarella cheese if using.
  6. Bake until hot and lightly browned on top; about 30 mins @ 400°F.

Make it your own

  • Choose the topping based on what you have and how you want to eat.
  • Make the topping rustic or completely smooth.
  • Change the vegetable blend based on what you have.
